Candied Fruits

QUESTION:

Thank you for the sugar-free recipes, especially the Holiday Fruitcake. However, I did not find instructions for making my own candied fruit for this cake. Please tell me how to do this or help me find it on your website. Thank you for all the wonderful work you are doing. You are a "Godsend".

DEBRA'S ANSWER:

The recipe for making candied fruits is at Candied Citrus Peel. I found it by typing "candied" into my onsite search engine--access through the big purple SEARCH button on every page of all my websites--but there is also a link to it right where the ingredient is given in the recipe. You can use it to candy any fruits actually.

The recipe calls for using whole, brown, evaporated cane juice, so the color isn't bright and sparkling like it is when you use white sugar. And evaporated cane syrup doesn't crystallize or get hard and sticky like white sugar. But in a cake or pie, this candied citrus peel is lively and zesty and a great counterpoint to the sweeter fruits.

You could also use honey to candy fruits and it will behave more like white sugar.

dear debra

ingestion of simple sugars-fruits included-and white flour, plus processed foods are related to several degenerative diseases plaguing america, the most obvious being OBESITY. You do sound like a great cook, but please don't make it sound as it is HEALTHY to eat the above foods. After ingesting sugars, flours etc our white cells( which fight infection/immune system, go into suspension for more than 6 HOURS)

PLEASE REFER YOUR READERS TO DR.MERCOLA'S SITE (www.mercola.com), where there are several articles about nutrition and the lack of information and misleading information given by the FDA, EPA, and government institutions.

COMMENT FROM DEBRA: I agree with you about the affects on the body of the foods you name. However, the reality is that people are eating sweets containing those ingredients. What I am offering on my Sweet Savvy website are healthier alternatives.

I myself have gone through the transition from eating sugar and flour to not eating them. Going "cold turkey" is very difficult both physically and psychologically. By taking the step to natural sweeteners and fruit rather than refined sweeteners, I found I was eating less and less sweets with relatively little effort. Now I eat very few.

There seem to be two points of view about food. One says "you musn't ever eat the 'bad' foods". The other is, "eat a good diet most of the time and an occasional treat won't hurt your body." I like the viewpoint that allows for an occasional treat. And when I have that occasional treat, I'd rather eat one that creates less harm for my body.

In my writing about alternatives to refined white sugar, I know I am writing to a large audience with many different eating habits. And I know these kinds of changes require a step-by-step approach. I'd rather someone make cookies with rice syrup and white flour as a step in the right direction than make sugar cookies with white sugar.

So I'm going to continue to offer my sweetener alternatives, and agree with you too!
