Peanut Butter Balls
This is for those of you who love peanut butter cups.
makes 2 balls
1 tablespoon peanut butter (choose a sugar-free brand, creamy or chunky) 1 tablespoon powdered unrefined cane sugar (sold as "organic" powdered sugar) 1 teaspoon butter, softened 1/4 cup chocolate chips (sweetened with barley malt syrup or evaporated cane juice) - In a small bowl, mash peanut butter, powdered evaporated cane juice and butter together with a fork, then mix until creamy.
- Chill for about ten minutes.
- Divide the mixture in half and shape it into two balls.
- Let the balls stand about 20 minutes to dry.
- Melt the chocolate chips, dip balls and chill to harden, or roll in more powdered evaporated cane juice or powdered cocoa.
Audrey Queckboerner from Indiana wrote... I'm always fearful to try a new recipe, especially when it only has healthy stuff in it. When it's healthy, it usually means gross. I was looking through an old recipe book that belonged to my mom and a piece of paper slipped out that had this recipe on it. It sounded like it was worth taking the risk of trying and I actually liked it! SESAME BALLS 1/2 cup carob powder 1/2 cup organic creamy peanut butter (crunchy might work too and give it a nutty flavor) 1/2 cup honey 1/2 cup sesame seeds Mix all ingredients thoroughly and roll teaspoon full in sesame seeds. Place in refrigerator. (I ran out of sesame seeds and used crushed pecans to roll my mixture in. That's good too. Might try adding some vanilla or almond extract next time and see what that tastes like.) ~ Audrey P.S. The actual ingredients above were listed in milliliters and I converted it. It's actually just a tad more than a 1/2 cup peanut butter and just shy of 1/2 c. honey and carob powder.
