Larry's Almond Bonbons

This is a joint creation between my husband and me--after I made the filling, he said, "Oh this needs to be dipped in chocolate and rolled in nuts!". And so it is.

makes 2 balls

1 tablespoon almond butter
1 tablespoon almond meal
1 teaspoon agave nectar
a few drops almond extract
1/4 cup chocolate chips (sweetened with barley malt syrup or evaporated cane juice)
1 tablespoon toasted almonds, chopped

  1. In a small bowl, mash the almond butter, almond meal, agave, and almond extract together with a fork, then mix until creamy.
  2. Chill for about ten minutes.
  3. Divide the mixture in half and shape it into two balls.
  4. Let the balls stand about 20 minutes to dry.
  5. Melt the chocolate chips, dip balls, then immediately roll in the chopped toasted almonds.
  6. Chill to harden before serving.
