Lemon Bars

makes 2 dozen 2" square bars

1 recipe Lemon Curd
1 recipe "Sugar" Cookies for Cut-Outs

  1. Preheat oven to 350 degrees F.
  2. Line a 9"x13" baking dish with parchment paper.
  3. Make the Lemon Curd and allow to cool.
  4. Make the "Sugar" Cookie dough. Instead of cutting out the "sugar" cookies, pat the dough into the bottom of a 9"x13" baking dish.
  5. Pour the lemon curd over the top and spread to cover.
  6. Bake for 20 minutes.
  7. Dust with powdered unrefined cane sugar (sold as "organic powdered sugar")
