Peanut Brittle

You can use any nuts for this, but peanuts are most popular...Whereas the other recipes in this section are mainly nuts with a little sweetener, this is candy with a few nuts.

This is a variation on the toffee recipe that was in Issue #1.

1 recipe Toffee
1 cup roasted peanuts (salted or unsalted)

  1. Prepare a cookie sheet by placing a piece of parchment paper or silpat on it.
  2. Make the toffee according to the recipe.
  3. As soon as the mixture pulls away from the sides of the pan, immediately add the nuts all at once, stir them in, and turn the mixture out onto the cookie sheet. Scrape the sides of the pan with the wooden spoon, and smooth the brittle to an even height.
  4. Fill the pan immediately with water and allow it to soak before washing.
  5. Allow to cool for about 20-30 minutes, then break into irregular shapes of any size.
