Iced Coffee

For some reason, this just tastes so delicious, rich and decadent to me. I just make a small cup and sip it for a mid-afternoon treat or after dinner.

makes about 2 cups concentrate

4 teaspoons instant coffee (I use organic decaf)
3/4 teaspoon white powdered stevia
2 cups water
heavy cream to taste (optional - note heavy whipping cream has virtually no carbs--half and half and milk do have significant carbs; cream, of course, does have calories)

  1. Dissolve the instant coffee into the cold water.
  2. Dissolve the stevia into the coffee and chill.
  3. Serve poured over crushed ice, topped with cream and a sprig of mint, or simply in a small cup with cream.
