Apple Syrup
This is very sweet syrup, which can be used as a liquid sweetener in recipes or on pancakes or other foods on which you would use honey or maple syrup. Usually I recommend fresh raw juice for drinking, but in this case, since the juice is being boiled down, it doesn't make any difference if you start with bottled juice or frozen juice concentrate, both of which have been heated. To use this as a sweetener in recipes, substitute 2/3 cup for one cup sugar and reduce the liquid by 1/3 the amount of the apple syrup used.

1 12-ounce package of frozen apple juice concentrate OR 6 cups of fresh or bottled apple juice Bring to a boil, then simmer until the concentrate or juice boils down to one cup. Concentrate takes only about 10-15 minutes; juice will take much longer. When it looks like about a cup, measure it in a glass measuring cup, then put it back in the pot to boil down until it reaches one cup.
